Ingredients Serving: 4

  1. Rice 2 cup ( soaked in water for 30 mintues)
  2. Cauliflower 1 cup sliced ( medium size)
  3. Carrots 3 sliced
  4. Potatoes 2 sliced and lightly fried
  5. Green Peas 1 cup
  6. French beans 1/2 cup cut into little pieces
  7. Broccoli 1/2;cup optional
  8. Bell peppers mix red, green, yellow
  9. Corn 1/2 cup boiled
  10. Onion 2 thinly sliced
  11. Ginger Garlic paste 2 tablespoon
  12. Ginger 1/2 inch whole
  13. Green chillies 3 sliced
  14. Tomatoes 2 chopped
  15. Green cardamom 5
  16. Cardamon big 1
  17. Cloves 6
  18. Mace 2 small pieces
  19. Nutmeg 1
  20. Cinnamon 1 inch long
  21. Peppercorns 6
  22. Bay leaves 2
  23. saffron soaked in milk
  24. Salt according to taste
  25. Red Chilli Powder 1/2 teaspoon
  26. Curd 1/2 cup
  27. Oil 4 tablespoons
  28. Ghee 4 tablespoons
  29. Coriander and mint leaves

Instructions

  1. Put 6 cups of water into a pot and add all khada masalas into it. And add little salt. When water starts boiling add soaked rice. Parboil the rice so that there must be a little crunch that will be cooked with dum. When it's done, strain rice. Remove all the khada masalas.
  2. Now heat oil in pan and add 1 sliced onion to it. Fry it till it becomes brown. And remove it on kitchen paper. Now add the leftover sliced onion, ginger, garlic paste. Put green chillies and ginger in a grindstone and crush them coarsely. Add it to the handi. When it turns golden brown add chopped tomato. When masala is done add turmeric, salt, garam masala and red chilli powder. After a minute, add chopped vegetables and corn to it. Cook it till veggies become tender. Now add whisked curd.
  3. Now take another pan or handi with lid, arrange layers of rice and cooked vegetables. First put some ghee on base of handi and make first layer of rice, then vegetables. Now add in every layer put some coriander and mint leaves. Repeat this process. But it is necessary that the last layer is also of rice. Now add fried onions, coriander and mint leaves. Pour ghee all over it. Add saffron milk and kewada essence.
  4. Now cover this with lid. Tightly sealed the edges with dough routinely used for making chapattis. Put this handi on tawa which is placed on gas. The flame should be minimum. Put it on this for dum for 15 minutes.
  5. The biryani is ready. Serve it with curd and chutney.
