ABOUT Maggi Khao Suey RECIPE

Explore this Burmese delicacy bursting with authentic flavours. Khao suey is a one-pot meal with noodles and veggies cooked in coconut milk and garnished with peanuts, fried onions, boiled eggs, fried garlic etc.

Ingredients Serving: 8

  1. 2 onions, finely diced
  2. Oil- 1 tbsp
  3. 2 tblsp fresh ginger garlic paste
  4. 1 ½ cans of coconut milk/ 5 tbsp Coconut powder in 200ml water
  5. ½ tsp turmeric powder
  6. 1 tsp red chilli flakes
  7. 6 cups vegetable stock
  8. 1 small piece of lemon grass stalk
  9. 1/2 cup of chickpea (gram) flour
  10. ½ cup Carrots , cubed (or other vegetables of choice)
  11. Lemon juice and salt according to taste
  12. 2 packages Maggi Noodles
  13. Corn flour if required
  14. Maggi tastemaker masala- ½ tsp
  15. Juice of half a lemon
  16. Traditional Garnishes-
  17. 1.Fried onions
  18. 2.Fried garlic chips
  19. 3.Crispy fried Maggi noodles
  20. 4.Hard boiled eggs
  21. 5.Lemon wedges
  22. 6.Chopped coriander
  23. 7.Chopped Spring onions
  24. 8.Chilli flakes/Chilli oil

Instructions

  1. In a large pot add a dash of oil and sauté the onions along with the ginger garlic paste , turmeric and the red chilli flakes until fragrant. Add in all the chickpea flour.
  2. Toss in vegetable pieces and chopped lemon grass and cook till raw smell of the chickpea flour goes away.Add a splash of vegetable stock at this point.
  3. Then whisk in 1 cup of stock and cook till thick.Add cubed tofu.
  4. Add remaining stock bring to a boil. Simmer for 10 minutes .
  5. If your Maggi noodles are not pre-cooked, boil them now until they’re slightly underdone, and place them at the bottom of a deep serving bowl.
  6. With a ladle, pour the vegetable stew over the top of the noodles and garnish with traditional garnishes like boiled eggs, garlic chips, fried onions etc.
