Kaipola(Banana Cake/Steamed Plantain Cake)

Ingredients to make Kaipola(Banana Cake/Steamed Plantain Cake)

  • Ripe bananas 3
  • eggs 4
  • sugar 2-3 tbsp
  • cardamom powder 1 tsp
  • cashewnuts slivered 10
  • raisins 10-12
  • Ghee/butter 2-3 tbsp

How to make Kaipola(Banana Cake/Steamed Plantain Cake)

  1. Whisk the eggs with sugar and cardamom powder. Set aside.
  2. In a non stick pan, heat the ghee and fry the cashews and the raisins. In the same pan, fry the sliced bananas for 2-3 mins. Flame should be low. Wait until it cools down a bit.
  3. Now add in the eggs and mix well.
  4. Cover and cook on low flame until done. It is ready in 15 -20 mins.
  5. This can be baked too on 180° for 20-25 mins. But i tried the slow cook method. This gives an authentic taste and flavour to the dish.
