Stuffed brinjal

Ingredients to make Stuffed brinjal

  • Round brinjals- 12
  • onions- 3
  • peanuts- 1/2 cup
  • coriander seeds- 1 tbsp
  • tamarind juice - 1 cup
  • salt- as per our taste
  • chilli powder- 1 tbsp
  • turmeric Powder- 1 tsp
  • sesame seeds- 1 tbsp
  • cloves- 4
  • cinnamon stick- 1 inch
  • ginger garlic paste- 2 spoons

How to make Stuffed brinjal

  1. In a non stick pan and add oil and add cloves and cinnamon stick.
  2. Next fry onions, ginger garlic paste, peanuts and saute for few minutes.
  3. Now add sesame seeds and switch off the stove .
  4. Let it cool for 15 minutes and then transfer to a blender
  5. Add salt, turmeric and chilli powder and little tamarind paste and blend into a smooth paste.
  6. Clean brinjals in water. In another bowl add salt to water and keep ready.
  7. From the bottom side make slits in brinjal , so that we can stuff the paste prepared by us.
  8. Add all slit brinjals to salt water and then stuff the paste.
  9. In a pressure cooker, add oil and the left over paste. Check for salt and spice and add accordingly.
  10. Add water to make it a liquid consistency.
  11. Now add stuffed brinjals to the pressure cooker slowly and cook in very slow flame for 1 whistle.
  12. Let it cool and then remove the whistle and then transfer into serving bowl.garnish with coriander leaves.
  13. Serve with hot rice.

My Tip:

Select good brinjals without any holes, so that our stuffed brinjal looks good . This recipe can be done even without pressure cooker. To ensure that brinjals are cooked well, I like to cook in pressure cooker for 1 whistle only.
