Vanilla Cake

Ingredients to make Vanilla Cake

  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1/2 Cup butter
  • 2 eggs
  • 3/4 cup Caster sugar
  • 1/2 cup thick buttermilk
  • 1 teaspoon vanilla essence

How to make Vanilla Cake

  1. Preheat oven to 175 degrees C. Grease and line one 8 1/2 x 41/2 inch loaf tin.
  2. Whisk together flour, baking powder, baking soda and salt
  3. Cream butter and sugar till light and fluffy
  4. Add eggs and beat till the mixture becomes light and frothy. Add vanilla essence
  5. Add half of the flour mix to butter-sugar mixture and add half buttermilk. Mix. Add remaining flour mix and buttermilk in the second shift and mix well to get a smooth batter.
  6. If the batter is too thick or too dry, add more buttermilk to get the right consistency. The batter should not be runny.
  7. Pour the batter into the prepared pan.
  8. Bake for 1 hour or until the top turns golden brown and a toothpick inserted in the center comes out clean.
  9. Remove from the oven. Remove from the pan after 10 minutes. Cool on the rack. Slice when cold.

My Tip:

You may use all-purpose flour for a lighter crumb
