ABOUT Sindhi Milk Koki RECIPE

All Sindhi's make Koki but everyone has their own style of making it. This recipe I have learnt from my Mother- in -Law & she from her Mother. This particular koki is kneaded with milk which gives it a flaky and crisp texture like biscuit. You wouldn't find this recipe on Google so for sure this recipe is treasure and for keeps.

Ingredients Serving: 1

  1. 1 big katori wheat flour
  2. Salt to taste about 1 tsp
  3. Black pepper powder half a tsp
  4. Oil 4 to 5 tsp
  5. Cold or lukewarm milk 5 to 6 tsp less or more
  6. To serve with :
  7. Boiled eggs 2
  8. Masala Tea

Instructions

  1. Take 1 katori of wheat flour
  2. Add salt, black pepper powder and oil.
  3. Rub oil in to the dough. Add moyan . It should resemble like flaky dough.
  4. Add lukewarm or cold milk little by little
  5. Once dough forms into ball shape, roll with rolling pin pressing the edges time to time
  6. Roll into little thick roti like shape
  7. It's ready to be basted on griddle
  8. Heat the griddle properly. Now lower the flame.
  9. Once it's done on the down side flip it.
