ABOUT Mothi korma RECIPE

A dish where beautiful mothis floats in a yogurt base gravy. I’m inspired from the dish of Rajasthan gulab jamun curry. A complete veg dish , which can be made without onion and garlic also.

Ingredients Serving: 4

  1. *For mothi*
  2. Cottage cheese/ paneer – 150 gm
  3. Mawa – 100 gm
  4. Salt- 1 pinch
  5. Baking Powder- 1 pinch
  6. Saffron crushed- ¼ tsp
  7. Cardamom Powder- ¼ tsp
  8. Powder sugar- 1 tbs
  9. Plane flour- 1 & half tbs
  10. Raisin – 1 for each mothi
  11. Gee/ Clarified butter – 1 tsp
  12. oil- for frying
  13. *For korma*
  14. Brown Onion paste- 3tbs
  15. Ginger paste- 1 tbs
  16. Green chili- 2
  17. Cardamom- 2 peeled
  18. Cinnamon stick- 1 inch
  19. Cloves- 2 piece
  20. Bay leaf- 1 small
  21. Mace – half of one
  22. Cashew & melon seed paste- 2 tbs
  23. Yogurt - 100 gm
  24. Turmeric Powder- 1 tsp
  25. Red chili powder- 1 tbs
  26. Garam masala- 1 tbs
  27. Oil/Clarified butter- 3 tbs
  28. Salt – as per taste
  29. Sugar – 1 tbs
  30. Fresh Coriander leaves- 2 tbs
  31. Cashew (finely chopped)- 1 tbs (for garnish)
  32. Pista (finely chopped) - 1 tbs (for garnish)

Instructions

  1. Take a mixing bowl, add paneer(cottage cheese) & mawa, rub them for 5-6 min,
  2. Then add all the ingredients mention under *For mothi* category.
  3. Mix them well.
  4. Make small small ball of these dough.
  5. Stuff the balls with a raisin,
  6. Then, fry them in medium hot oil & keep them aside.
  7. Now take a karahi and add oil or gee to it, allow it to warm
  8. Add whole garam masala, and sugar stir it.
  9. Add ginger paste stir it.
  10. Add onion paste & little water
  11. Now after a min add powder spices and stir until oil gets separated.
  12. Now add cashew & melon paste, again add little water & mix it.
  13. After stirring for 4-5 min, add bitten yogurt. Keep stirring, until the oil gets separated again.
  14. Add little water, wait for a boil.
  15. Now time to add the mothis & fresh Coriander leaves. Add them & cook for another 5-6 min.
  16. Garnish the Mothi Korma with chopped cashew & pista.
  17. Your mothi korma is ready.
