ABOUT Banana Walnut Raisins Bread !! (Vegan + Eggless) RECIPE

My (Vegan ) version of this Perfect Banana Walnut Raisins Bread is inspired by Starbuck's Famous Banana Walnut Bread.Yeah, you may call it Starbuck's copycat version created by me ;) I always loved Starbuck's Banana Walnut bread with that hot cuppa of Mocha...Aha!! Who doesn't love?? But lately, when I started cutting down on refined sugar & milk products for a more healthier lifestyle.This Beautiful creation happened and I'm glad to share it.

Ingredients Serving: 10

  1. 1 3/4 cups Bread Flour
  2. 2 teaspoons baking powder
  3. 1/2 teaspoon Sea salt
  4. 1/2 teaspoon baking soda
  5. 3 medium ripe mashed bananas
  6. 2/3 cup organic brown sugar/coconut sugar
  7. 1/3 cup dairy free butter ( I used Nuttelex)
  8. 2-3 tablespoons any nut milk of your choice ( I used almond milk)
  9. 2 flax eggs
  10. 1 cup chopped Walnuts
  11. 1 cup raisins

Instructions

  1. Preheat the Oven to 350 degrees F or 180 degrees C
  2. Combine all dry ingredients (flour+ baking powder+ baking soda+ salt) in a big bowl.
  3. In an another bowl, mix Butter+Sugar and whisk using a hand mixer till it gets light and fluffy. Add in mashed bananas, flax seeds, eggs, milk and mix well.
  4. Add 1/2 of dry ingredients into wet ingredients and mix well. Then add the remaining flour and 1/2 of walnuts and raisins and mix well. Do not over stir.
  5. Pour Batter into a greased loaf pan. Then top the Batter with remaining Walnuts and Raisins.
  6. Bake at 350 degrees for 55-60 minutes or until a toothpick comes out clean from the centre.
  7. Cool for 15-20 minutes and then transfer on a wire rack. Allow to cool completely before slicing.
