ABOUT Veg Kolhapuri RECIPE

It's Maharashtrian cuisine, little spicy. A healthy vegetable recipe which can be had with all the Indian breads.

Ingredients Serving: 4

  1. dry masala: dry or wet coconut grated
  2. poppy seed 1 tsp
  3. dhania seeds 1 tsp
  4. 1 stick cinnamon
  5. 1 small cardamom
  6. 1 clove
  7. Jeera half tsp
  8. Cauliflower 1 cup
  9. Green peas half cup
  10. french beans half cup
  11. carrot one fourth cup
  12. potato chopped in pieces 1
  13. Onion chopped 1
  14. Tomato chopped 1
  15. Ginger garlic paste 1 tsp
  16. salt as per taste
  17. Red chili powder 1 tsp
  18. Haldi powder half tsp
  19. dhania powder half tsp

Instructions

  1. In a pan add oil, jeera and onions
  2. Saute for two minutes
  3. Now add green chilli and ginger garlic paste
  4. Roast all the dry masala mentioned in the ingredients and grind to powder
  5. Check the thickness
  6. Add this to the onion masala we made earlier
  7. Add red chilli powder, haldi, dhania powder and salt
  8. Add half cup of water
  9. Cook for sometime
  10. Now add chopped tomatoes
  11. Add other vegetables
  12. Add more than half cup of water and mix
  13. Cover the pan and let it cook
  14. Cook for at least 10-15 minutes
  15. If you feel it has not been cooked
  16. Add a little more water
  17. Now its cooked
  18. Remove in a serving bowl
  19. This is what the finished recipe looks like.
