Ingredients Serving: 4

  1. Spinach 1 bunch
  2. Cottage Cheese Cubes/Panner 250 grams
  3. Tomatoes Chopped finely 4
  4. Green chili 1
  5. Red Chili 1 tsp
  6. Cumin powder 1 tsp
  7. Turmeric powder 1 tsp
  8. Salt to taste
  9. Sugar to taste
  10. 10 cashew nuts soaked in warm milk and ground to fine paste
  11. oil 2 tbsp
  12. Garam Masala:1 tsp
  13. Whole Spices : 2 bay leaf + 3 cloves + 2 green cardamom + 1 cinnamon stick

Instructions

  1. Fry paneer cubes for this recipe till golden brown. Keep aside. Wash spinach 3 to 4 times to remove all dirt particles.
  2. Add 1/3 cup of water and boil in pressure cooker for 1 whistle.
  3. As your pressure cooker drops pressure, grind tomatoes to a smooth paste. Remove and keep aside.
  4. Remove and keep aside.
  5. Now add spinach and blend to a not so smooth paste. It should have some leafy texture left. Blend your cashew and milk together.
  6. Now let us make the gravy.
  7. Heat oil in a kadai. Add all the dry whole spices.
  8. Add green chilies and tomato puree. Cover and cook on high . Make sure you cover th kadai while cooking else tomato puree will start dancing and spoil your entire gas stove.
  9. Add red chili powder, turmeric powder and cumin powder.
  10. Once your tomato is well cooked and you smell a nice aroma, add spinach puree. Cook for 2 to 3 minutes till spinach and tomato blend well.
  11. Add the cashew paste and cook for few more minutes. Add spinach paste, paneer cubes and half cup of water.
  12. Finally , take out a nice serving bowl, put your spinach gravy. Place the fried paneer cubes .
