Ingredients Serving: 5

  1. 4 tablespoon oil
  2. 6 heaped tablespoons Besan
  3. Water as needed
  4. Salt to taste
  5. 2 Green Chillies, chopped
  6. 1 teaspoon red chilli powder
  7. 1/2 teaspoon haldi
  8. 1 teaspoon mustard seeds
  9. 1 teaspoon whole jeera
  10. 12 to 15 Curry leaves
  11. 2 tablespoon green coriander leaves, chopped
  12. Two pinches hing
  13. Assorted vegetables as per choice like a few cluster beans,
  14. Few bhindis
  15. 1 or 2 small brinjal
  16. 4 potatoes
  17. 1 drumstick etc

Instructions

  1. Wash and chop all vegetables as per the size preferred.
  2. Do remember, smaller size will get cooked quickly.
  3. Heat oil in a very heavy aluminum vessel.
  4. Keep red chilli powder, haldi, hing , curry leaves, green chilli, mustard seeds, jeera and water handy as we need to put them in quickly .
  5. Add the besan to the hot oil and keeping the flame low, start frying the besan.
  6. It will need to be stirred continuously so that besan does not burn.
  7. This vdo shows the colour change after 5 minutes frying.
  8. After 5 more minutes, this is how it looks.
  9. Again, after 5 more minutes.
  10. With continuos stirring, the colour will keep on changing.
  11. After about 25 to 30 minutes of frying, add in the gathered ingredients quickly and let splutter for 1 minute.
  12. Add about 5 to 6 glasses of water.
  13. Add chopped vegetables, salt and adjust water as per need.
  14. Cover it partially with a lid and cook till the vegetables are cooked.
  15. This can take about 25 to 30 minutes.
  16. Lastly add 1 to 2 teaspoon of tamarind paste.
  17. Give one boil and cover with lid.
  18. Let stand for 5 minutes before serving with boiled white rice.
