    Eggless mango cake with Ganache frosting

    Ingredients to make Eggless mango cake with Ganache frosting

    • all purpose flour - 2 cups
    • baking soda - 1 tsp
    • Baking powder - 1 tsp
    • Powdered sugar - 1.5 cups
    • olive oil - cup
    • mango pulp - 1 cup
    • yogurt - cup
    • salt - tsp
    • Vanilla essence - tsp
    • water if required
    • For the chocolate ganache:
    • Dark chocolate chopped - 1 cup
    • Amul cream - 2 cup

    How to make Eggless mango cake with Ganache frosting

    1. Pre-heat the oven at 180°C.
    2. Sift together all purpose flour, powdered sugar, salt, baking powder and baking soda.
    3. In a bowl, mix oil, mango pulp, yogurt and essence.
    4. Fold in the dry ingredients. Add water if required to make the batter have a ribbon consistency.
    5. Grease/line a baking dish. Pour the batter in the dish.
    6. Bake for 25-30 minutes or until the toothpick inserted in the cake comes out clean.
    7. Let it cool for an hour.
    8. For the frosting - Heat a pan. Pour in the cream and just heat it. You do not need to boil it. Turn off the heat.
    9. In a bowl, add the chopped chocolates. Pour in the cream and stir. Let it sit for a few minutes.
    10. Now mix it until smooth. Let it cool for an hour.
    11. Pour over the cake and refrigerate.

    My Tip:

    For the Ganache I have used the ratio of chocolate to cream as 2:1.
