Ingredients Serving: 4

  1. 250ml milk
  2. 85g egg yolks
  3. 45g castor sugar
  4. 7g gelatine
  5. 120g Belgian dark chocolate (64%)
  6. 270 ml whipping cream whipped.
  7. 500 g fresh raspberries

Instructions

  1. Prepare an anglaise with the milk, yolks and sugar.
  2. Add the gelatine and pour over the dark chocolate and homogenise to obtain a smooth mixture.
  3. Let this mix come to 31 degrees Celsius.
  4. Gently fold the whipped cream to obtain a rich and smooth chocolate mousse.
  5. Fold in the fresh raspberries.
