ABOUT Pak Choi Chicken Salad RECIPE

I love experimenting new Salads. This Salad is inspired by one I came across in a local magazine. And what caught my attention was the Pak-Choi. I love incorporating greens in my food, But whole lot of raw green leaves?? Kept me wondering about the outcome... hmm so just gave it a try and you won't believe, the salad bowl was all wiped out at dinner. And the result was guilt free indulgence, almost like winning the battle without much effort, that too in a" healthy" way. Pak choi belongs to the cabbage family, and is known by different names like, Bok choy, Horse's ear, Chinese celery cabbage and White mustard cabbage. It looks like a short Celery with white or pale green Chunky stalks and dark green leaves. The flavour is somewhat between Crunchy cabbage and Spinach. Easily available in your local supermarket. Ingredients Serving: 4

  1. For the Dressing mix:
  2. olive oil- 2 tbsp
  3. Red Grape vinegar-2 tbsp
  4. Balsamic Vinegar- 1 tbsp
  5. Sugar - 1 tbsp
  6. Pomegranate juice- 100 ml
  7. Sesame seeds- 2 tbsp
  8. salt- a pinch
  9. For the salad:
  10. Green beans blanched and halved- 100gms
  11. Cucumber cut lengthwise into strips-1
  12. Small red cabbage cut into strips-1
  13. Baby Pak Choi (hard white stem removed, rest cut into strips)- 2-3
  14. Spring onions chopped - 3
  15. Toasted, salted cashew nuts coarsly chopped- 100gms.
  16. Packet of Raw Maggie noodles- 1
  17. Pomegranate arils (fresh)- 1/4 cup
  18. Fresh mint chopped- handfull
  19. chicken breast cut into strips-1(you can use left over chunks)

Instructions

  1. In a bowl mix all the ingredients mentioned under "Dressing". Keep aside.
  2. Marinade chicken with pepper, salt, ginger-garlic paste and just stir fry till cooked.Kee.p aside
  3. In a mixing bowl, toss in the beans, cucumber, red cabbage, pak choi, spring onions (You can add chicken strips now or serve it on top of the salad in the end)
  4. Sprinkle few cashews, save some for garnish. Pour the dressing and mix thoroughly. Crush with hands into small bits and add the raw two minute 3, noodles to the mixture, just before serving, to avoid noodles from getting soggy.
  5. Garnish with Pomegranate arils, cashews and fresh mint.
