ABOUT Kerala vegetable stew RECIPE

It's a famous dish from Kerala. It have a loads of flavor of coconut milk. If you can, use fresh coconut milk.

Ingredients Serving: 2

  1. Potato – 1 big or 2 medium sized
  2. Carrot – 1 big
  3. Onion – 1/2 cup chopped
  4. Ginger – 1/2 tbsn chopped finely
  5. Green chilli – 2 or 3 slit lengthwise
  6. Thick coconut milk – 1 cup
  7. Salt – as required
  8. Curry leaves – few
  9. Coconut oil – 1 tsp

Instructions

  1. Boil or pressure cook potatoes and carrots till cooked. Not mushy. (If pressure cook just till 2 whistles)
  2. Peel the skin and chop it to small cubes.
  3. In a pot, add 1 to 1 1/2 cups of water.
  4. When it starts to boil, add chopped onions, ginger and green chillies.
  5. When the onions turns transparent, add cubed potato and carrot.
  6. Add salt and slightly mash one or two potatoes. This gives little thickness to the stew.
  7. When it thoroughly boils and raw smell of onions are no more, simmer the flame and add coconut milk.
  8. Stir well. Do not let it boil severely after adding coconut milk. Just 1 or 2 minutes.
  9. Add Curry leaves and drizzle coconut oil.
  10. Switch off the flame and cover the pot with lid. This helps to lock the flavor of coconut oil and curry leaves in stew.
  11. Serve warm with Appam, idli or dosa
