Pudina Mutton Biryani

Ingredients to make Pudina Mutton Biryani

  • 500 gms mutton
  • 2 glass rice
  • salt to taste
  • 4 + 1/2 glasses water
  • For Tempering: oil for frying
  • 3 big onions
  • 2 big tomatoes
  • 1/2 cup pudina
  • To Grind: 1 onion / 1/4 cup fresh coconut
  • 1/2 inch cinnamon stick
  • 6 to 8 cloves
  • 1 inch ginger
  • Handful of garlic
  • A bunch of coriander leaves
  • 9 to 12 green chillies
  • Pinch of turmeric powder

How to make Pudina Mutton Biryani

  1. Grind all the ingredients under section "to grind".
  2. In a cooker add cleaned mutton pieces and fry till water evaporates completely (water which mutton leaves).
  3. Now add the grinded paste, salt, 2 glass of water, mix well (this helps the mutton pieces to absorb the salt and spices). Now close the cooker lid. Boil until mutton is cooked to tender.
  4. In a big vessel add oil (make sure the oil of mutton and this oil doesn't make the dish too oily). Once oil is heated, add onion and fry till soft.
  5. Then add pudina leaves and fry for a minute or two. Add tomatoes and fry till it is cooked well.
  6. Now add the cooked mutton along with the gravy (which was prepared in the cooker). Fry and allow it to boil. Check for the seasoning.
  7. Now add the rice and remaining water, mix well and cook it on a low flame with lid closed. Stir occasionally and make sure the dish doesn't burn at the bottom. Cook till rice is cooked​ to perfect.
  8. Serve the pudina mutton biryani with raita.

My Tip:

Use soft and fresh mutton.
