ABOUT Cheesy/Veggie Omelette Sandwiches RECIPE

A healthy toaster idea for breakfast. Yummy and a quick one to make on the busy mornings. Full of proteins, vitamins and minerals that come from the veggies. Add your favourite veggies to make it according to your family's preferences.

Ingredients Serving: 4

  1. Eggs 4
  2. Sweet corn 1 cup
  3. Capsicum chopped 1 cup
  4. Carrot chopped 1/2 cup
  5. Parsley or coriander chopped a handful
  6. Salt to taste
  7. Butter 2 tbsp
  8. Chilli flakes 1 tbsp
  9. Garlic mince 1 tbsp
  10. Mozzarella cheese 3/4 th cup

Instructions

  1. Whisk the eggs well and add in all the ingredients.
  2. Give them all a good mix and heat the toaster in the meanwhile.
  3. Pour 2 tbsp of the mix in each of the groove of the toaster. It will take around 2-3 mins for one batch.
  4. Four sandwiches can be made per batch.
  5. This recipe makes around 12 of them.
  6. Enjoy with ketchup or chilli garlic sauce.
