Baby potatoes in a north Indian gravy

Ingredients Serving: 4

  1. Baby potatoes-250 gms
  2. Tomatoes-4 medium size
  3. Onion-2 medium size
  4. Garlic-6 cloves
  5. Ginger-1 inch pc
  6. Green Chilli-1
  7. Curd-1 tbsp
  8. Bayleaf-1
  9. Dried Red chilli-2
  10. Cloves-5
  11. Cinnamon-1 inch piece
  12. Cardamom-3
  13. Cumin Seeds-1 tsp
  14. Asafoetida-1/4tsp
  15. Turmeric-1/2 tsp
  16. Chilli powdee-1 tsp
  17. Salt to taste
  18. Cumin and coriander powder-1 tsp each
  19. Kasuri methi-1/2 tsp
  20. Sugar-1/2 tsp
  21. oil-1 tbsp
  22. Coriander for garnishing

Instructions

  1. First boil potatoes, cool and peel them.
  2. Grind garlic, ginger, green chilli, onions and tomatoes together.
  3. Now take oil in a pan and first fry potatoes in this oil.They should be golden after frying.
  4. Now pierce these potatoes with fork.
  5. In the same oil, add cumin seeds, dry spices like cinnamon, cloves, elaichi, red chilli, bay leaf and then asafoetida.
  6. Saute for a minute and add the tomato onion mixture.
  7. Saute till raw smell goes and it starts leaving oil. Add turmeric, cumin powder, chilli powder, salt, sugar, garam masala, kasuri methi and saute for a minute.
  8. Add curd stirring continuously and at low flame.
  9. Now add the potatoes and a cup of water and cover. Let it simmer for 2 minutes so that gravy mixes with potatoes.
  10. Garnish with coriander and serve with hot fulkas, parathas or naan.
