ABOUT Chinese Bhel with Baked Maggi noodles RECIPE

Baking the Maggi noodles until they are golden brown instead of frying them makes this a healthy and yummy dish!

Ingredients Serving: 4

  1. 2 small packets Maggi noodles
  2. 1 teaspoon toasted sesame oil
  3. 2 teaspoons toasted sesame chili oil for stir frying
  4. 1 clove garlic, grated
  5. ½ teaspoon grated green chili
  6. 4 cups thinly sliced white cabbage
  7. 1 cup thinly sliced carrots
  8. 1 cup thinly sliced capsicum
  9. 1/2 cup thinly sliced red capsicum
  10. ½ cup sliced water chestnuts (from a can)
  11. Salt to taste
  12. ½ teaspoon white pepper powder
  13. For the sauce-
  14. 3 tablespoon tomato sauce
  15. 1 tablespoon Chinese hot sauce
  16. 1 teaspoon soy sauce
  17. 1 teaspoon vinegar
  18. 2 teaspoons sugar
  19. Crunchy veggies-
  20. 1 cup thinly sliced cucumber
  21. ½ cup diced tomato
  22. ½ cup thinly sliced scallion

Instructions

  1. Combine the noodles and the sesame oil and bake in a preheated 150 degree Celsius oven, for 35 minutes or until golden brown. remove from oven and set aside. This can be done in advance and noodles stored. Reserve flavour packet for other use.
  2. Heat the sesame oil and add the grated garlic and green chili pepper. Stir and add the sliced veggies and the water chestnut.
  3. Add the salt and pepper, stir fry the veggies until they are just tender crisp.
  4. Combine all the ingredients for the sauce. Add the sauce, toss to coat and let it cook for a minute or so. Remove from heat.
  5. Toss in the baked noodles. Top with the cucumber, tomato and scallion and serve immediately.
