ABOUT Lemon Yogurt Cake RECIPE

The fresh and citrusy taste of lemon when mixed with sweet strawberries contributes to a nice tang to the cake. It is one of the best tasting cakes which I have baked so far. Since, I am pathetic when it comes to cake decoration, I decided to keep it simple. Poured some melted white chocolate on the top and garnished with freshly cut strawberries and lemon wedges.

Ingredients Serving: 6

  1. 2 cup all-purpose flour
  2. ½ cup custard powder
  3. 1 and ½ cup powdered sugar
  4. 2 tsp baking powder
  5. 1 cup oil or butter
  6. 1 tsp vanilla essence
  7. 1 cup greek style yogurt
  8. 2 Lemon- Juice extracted
  9. 2 Eggs
  10. ½ cup fresh strawberries chopped
  11. ½ tsp lemon zest

Instructions

  1. Preheat oven to 180 degree centigrade
  2. Seive All Purpose Flour, baking powder, powdered sugar and custard powder
  3. Break eggs in a bowl.
  4. Add oil or butter and beat nicely with an egg whisker
  5. Add yogurt, vanilla essence, lemon juice, lemon zest and mix everything well.
  6. Add the dry ingredients in small batches and mix well in one direction
  7. Beat with an electric beater for about 8 to 10 minutes
  8. Finally, add fresh strawberries and beat for 1 min more.
  9. Grease the baking tray, pour the batter and bake it for 38 to 40 minutes at 180 degree centigrade.
  10. Do a knife test to confirm that the cake has nicely baked
  11. Let it cool down completely before you de-mould and cut and serve
