ABOUT Soya Chunk Korma RECIPE

Soya chunks are made from soy beans and they work well as meat substitutes. Soya chunks are odourless and tasteless food item, but this unique food is highly nutritional and full of rich proteins.

Ingredients Serving: 3

  1. 1 Cup Soya Chunks( boil twice adding salt and sugar) squeeze well and set aside
  2. 1/4 th Cup Soya Granules:- keep in hot water for 20 mins
  3. Combination of Whole Spices( Cinnamon stick, green cardamom,black cardamom, fennel seeds, bay leaves,cloves,black pepper kernels, star anise)
  4. Ingredients To Make Brown Onion Paste: 4 Caramelized Onions / Brown Onions / Fried Onions (not more than 300 Gms) 6 Cashews (Kept in hot water for 30 – 45 minutes) ¼ Cup Full Fat Yogurt
  5. Salt (or as per your taste)
  6. ¼ tsp. Rose Kewda Water
  7. ¾ tsp. Garam Masala
  8. 1 1/2 cups Water
  9. 1.5 Tbsp Ginger and Garlic Paste
  10. Few ginger julienne
  11. 1/4 Cup Ghee (If you really want restaurant style add 3 Tbsp Ghee more
  12. Ingredients To Make Ground Masala Combination: 3 Tbsp Coriander / Dhaniya Powder 2 tsp Kashmiri / Deggi Mirch 1.5 tsp Red Chilli Powder ½ tsp Tumeric / Haldi powder ½ tsp Cumin /Jeera Powder
  13. For garnishing coriander leaves:- ahandful chopped Kasuri methi :- 1 tbsp

Instructions

  1. Heat oil and fry all whole masala until nice aroma comes then add ginger julienne and fry for 2 mins, add ginger garlic paste and fry well.
  2. Add ground masala combination and fry until masala is roasted well and oil starts separating from side add soya granules and allow it cook well, add salt and Brown onion paste and fry in slow flame and cook until oil starts separating
  3. add soya chunks and stir for 2 mins
  4. Cover with lid and cook for 3-4 mins
  5. Add kasuri methi and coriander leaves, serve hot with roti or rice.
