The whole idea to get children to eat and enjoy the vegetables. Team it up with their favourite Maggi. As children we loved it, a wonderful after school snack.

Ingredients Serving: 2
1 packet Maggi Masala (doubles) or any variety of Maggi you prefer.
1 cup chopped mixed veggies (carrots, green beans)
1 green capsicum cut into roundels
1 large onion cut I to rings (separated)
2 Eggs
Salt to taste
1 tablespoon of oil
Enough water to cook the maggi
Instructions
Cook the maggi as per instructions on the pack. Keep it aside for a few minutes till all the water is absorbed. (for convenience you may add slightly less amount of water)
Heat oil in a wok, add the diced or sliced vegetables. Stir and cook for two minutes.
Mix the cooked maggi and the vegetables.
Heat a tablespoon of oil in a flat fry pan. Place the capsicum rings and onion rings in a layer. Cook for about a minute. Pour the two beaten eggs on the onion and capsicum layer. Cook covered for a minute.
When the egg is nearly done turn the gas to very low flame, put the cooked maggi and vegetable mix on the egg. Cover and cook for a minute till done.
Put a plate on the pan and turn it over on to the plate. Serve hot with tomato chilli sauce.
