ABOUT Honey & raisin yogurt ice cream tart RECIPE

Ice creams have no season, do they !!! Here's a new one, made "HONEY & RAISINS YOGURT ICE CREAM TART, with SUGAR SHARDS " an ice cream, which is little bit guilt free as it is made of curd and not cream but absolutely yum, served on a no-bake tart.

Ingredients Serving: 6

  1. Ice cream :
  2. Hung curd - 1 cup
  3. Honey - 2/3rd cup
  4. Milk - 1 cup
  5. Sugar - 1/4th cup
  6. Kishmish - 1/4th cup
  7. Egg yolks - 2
  8. Biscuit tarts :
  9. Bourbon biscuits - 8
  10. Ghee/butter - 1/4th cup
  11. Sugar shards :
  12. Sugar - 1/4th cup
  13. Water - 2 tbsp

Instructions

  1. Whisk the hung curd and honey together, keep aside.
  2. Now in a pan heat the milk and bring up-to boil.
  3. Add the sugar and boil till it dissolves. While this is happening, keep the egg yolks whisked.
  4. Remove the milk mix from the flame and slowly add to the egg yolks while whisking.
  5. Pour the milk egg mix back into the pan and heat on a low flame and cook till it becomes thick.
  6. Cool this and mix it with the yogurt mix, add Kishmish as well.
  7. Pour it into a box and freeze it for 6-7 hours.
  8. Bash the biscuits to form a coarse powder.
  9. Melt the ghee and add it to the biscuit powder. Spoon them into the moulds and tap them. Freeze for 10 minutes.
  10. Heat the sugar and water together without stirring, wait till it changes to light golden color. Remove from heat.
  11. Pour it into a pan lined with aluminium foil. Cool it and break it into pieces.
  12. Assembly: Demould the biscuit tarts, put a dollop of ice-cream and top it with a sugar shard.
