Fried Mutton Chops

Ingredients to make Fried Mutton Chops

  • Lamb chops - 7-8
  • cinnamon - 2 medium stick
  • bay leaf - 1
  • fennel seed - ½ tsp
  • Black peppercorns - ½ tsp
  • Cardamon - 3 pods
  • star anise small piece
  • salt to taste
  • Milk - 2 cups
  • Evaporated milk - ¾ cup
  • curd - ½ cup
  • flour - 2 tsp
  • chilli powder - 1 tsp
  • ginger Garlic Paste - 1 tsp
  • Garam masala - ½ tsp
  • salt to taste
  • oil - ½-1 cup
  • mint leaves chopped for garnish
  • lemon juice

How to make Fried Mutton Chops

  1. Take the lamb chops in a pan. Add the Cinnamon, peppercorns, fennel seeds, bay leaf, star anise and salt.
  2. Add milk and bring it to a boil on high heat. Once it comes to a boiling point reduce the heat to medium and continue to cook.
  3. Cook for about 20 mins or till the milk is evaporated to half of its quantity. Add the evaporated milk and cook till the milk is completely evaporated.
  4. Take out only the chops from the pan and discard the whole spices.
  5. Meanwhile in a mixing bowl take curd, ginger garlic paste, salt to taste, garam masala, red chilli powder and flour. Mix well till smooth. Keep aside. Dip the chops in the mixture and coat it well.
  6. Heat oil in a deep frying pan. When the oil is heated up, lower the heat and add the chops and fry till slight golden brown color on both sides. Do not over fry it because that will ruin the whole taste and harden the lamb chops.
  7. Garnish with chopped mint leaves (I run out of stock so not used) and squeeze lemon juice and serve.
