ABOUT Potato and Egg Summer Salad RECIPE

The concept of summer salads is catching up in India in the Metro cities! The reason being that people who have a sedentary life are having problems like Obesity, Diabetes and related complications.

Ingredients Serving: 2

  1. 2 Potatoes - boiled, peeled and diced
  2. 4 hard boiled eggs - boiled, peeled and diced/cut into roundels
  3. 1 small Cucumber - peeled and diced
  4. 1 Tomato - diced
  5. 1 Onion - Sliced
  6. 2 tsp salt
  7. 1 tsp pepper
  8. 1 tbsp white vinegar
  9. 2 tbsp Parsley - chopped fine
  10. For the Salad Dressing :
  11. 1 tbsp balsamic vinegar
  12. 1/2 tbsp Mustard
  13. 1 tbsp Honey
  14. 2 tbsp salad dressing of your choice (I used Caesar's) - optional
  15. 3 tbsp olive oil

Instructions

  1. Prepare the Onions : Add 1 tsp salt and vinegar to the sliced Onion and mix well. Keep aside for 10 - 15 minutes till the Onion absorbs the vinegar liquid.
  2. Mix the vegetables : Mix cucumber and Tomato in a bowl. Put the diced Potatoes and egg slices on a plate and sprinkle the remaining salt and pepper on them.
  3. Prepare the Salad : Divide the Potatoes evenly in 2 serving bowls. Add half of the Tomato-Cucumber into each. Arrange the sliced Onion on the sides and put the egg slices in the middle.
  4. Spoon the dressing into the bowls and sprinkle with the chopped Parsley. Serve immediately else refrigerate the salad till serving time!
