Ingredients Serving: 2

  1. 250 gms shrimp
  2. 100 gms tight packed tofu
  3. 1/2 shredded ice berg lettuce
  4. 1/2 cup shredded cabbage
  5. 1/2 cup grated carrot
  6. 1/2 cup grated beetroot
  7. 1/2 cup red baby radish , cut into thin roundels
  8. 1/2 cup sliced yellow bell pepper
  9. 1 Green Chili, chopped
  10. Salt to taste
  11. 1 tsp crushed black pepper
  12. 2 tsp Lemon juice
  13. 1 tsp balsamic vinegar
  14. 1 tsp Red chili flakes
  15. 1 tsp olive oil
  16. 1/2 tsp sugar
  17. 2 tbsp chopped coriander
  18. 6 mint leaves
  19. 2 tbsp Roasted peanuts, husked & crushed

Instructions

  1. To prepare Tofu & Shrimp Salad Recipe With Balsamic Dressing, clean and wash shrimp properly.
  2. Heat olive oil in a pan and saute shrimps till golden and cooked.
  3. Cut tofu into small cubes and grill on stove top.
  4. Collect sauteed shrimps in a bowl and add balsamic vinegar, some crushed pepper, a pinch of salt and some lemon juice. Mix well such that everything coats well on shrimps.
  5. In a large mixing bowl add all the sliced, shredded and grate vegetables mentioned. Season them with salt, pepper, chili flakes and some lemon juice and mix well with a spatula.
  6. Add seasoned shrimps to the veg mix and toss well.
  7. Now add some more lemon juice if required, check salt and then add some sugar and roasted peanuts. Mix again.
  8. Garnish with some fresh chopped coriander and mint and serve Tofu & Shrimp Salad Recipe With Balsamic Dressing along with Minestrone Soup Recipe.
