ABOUT Ratatouille RECIPE

This is a classic French main course that melds the herby flavours of oregano with tomatoes and zucchini. One of the most loved dishes of all times.

Ingredients Serving: 4

  1. 1tblsp tomato paste
  2. 3 tablespoons olive oil
  3. 2 onions chopped
  4. 2 eggplant cut into cubes
  5. 1 small bay leaf
  6. 4 garlic clovesn peeled and sliced
  7. 2 zucchini halved lenght wise and cut into cubes
  8. 1 Each redyellow green bell peppers
  9. plum tomatoes coarsely chopped (about 1 1/4 cups)
  10. 1/2 cup shredded fresh basil leaves
  11. salt to taste
  12. pepper to taste
  13. chilli flakes 1/2 tsp
  14. Dried oregan 1/2 tsp


  1. Over medium-low heat, add the oil to a large skillet with the onion,, stirring occasionally, until the onion has softened. Add the three bell peppers and cook for few minutes.
  2. Add the eggplant and zucchini cook, stirring occasionally, for 8 minutes or until the veges has softened. Stir in the tomatoes and add garlic basil leaves and all the seasoning.
  3. In the end put the tomato paste and one glass of water. Cover and cook for 15 minutes on slow flame Don't over cook
