ABOUT MANGO SHRIKHAND / AMRAKHAND RECIPE

Amrakhand or mango shrikhand is one of the best tasting, fruit-based, traditional Indian desserts

Ingredients Serving: 6

  1. Fresh yoghurt 3 cup
  2. Large mango 1
  3. Powdered sugar 1/2 cup
  4. Chopped pistachios, almonds 1/4 cup
  5. Cardamom powder 1/4 teaspoon
  6. A few strands of saffron
  7. Warm milk 1 tablespoon
  8. Some mint leaves

Instructions

  1. Take the saffron strands and soak in warm milk for 1-2 hours.
  2. Take the curd in a strainer or in a muslin cloth for 3-4 hours you will get a thick yogurt.
  3. Puree the mango and add the thick hung curd to the blender along with crushed cardamom, saffron and sugar. Blend till smooth .
  4. Keep it in the fridge for an hour, pour mango shrikhand in individual serving bowls.
  5. Garnish with chopped pistachio, almonds and mint leaves. Served chilled.
