ABOUT Ragda Patties RECIPE

If you are looking for a tongue tickling spicy Indian chaat to satisfy your urge to have something chatpata, then look no further. Ragda patties, a combination snack made with thick ragda, potato patty or aloo tikki and variety of spicy chutneys, is a delightful experience to taste buds in every spoon. It also has the light garnish of sev, tomato, and onion that adds extra zing to its soft and crispy taste.

Ingredients Serving: 4

  1. For Patties
  2. Boiled Potatoes 6
  3. CornFlour 2tbsp
  4. Ginger, Green chili and garlic paste 1tsp
  5. Salt as per taste
  6. For Ragda
  7. Soaked White or Green Peas 1 1/2 cup
  8. Ginger Garlic and Green Chili Paste 1 tsp
  9. Onion 1
  10. Cumin Seeds 1tsp
  11. Oil 1tbsp
  12. Asafoetida 1/2tsp
  13. Turmeric 1/2 tsp
  14. Red Chilli Powder 1tsp
  15. Coriander and Cumin Powder 1tsp
  16. Garam Masala 1/2tsp
  17. Lemon juice 1tsp
  18. Coriander for garnishing
  19. Sweet Chutney
  20. Tamarind 2tbsp
  21. Dates 1Cup
  22. Jaggery 1/2Cup
  23. Chaat Masala 1tsp
  24. Cumin Powder 1tsp
  25. White Ginger Powder 1/2tsp
  26. Green Chutney
  27. Coriander Leaves 1 cup
  28. Mint Leaves 1tbsp
  29. Green Chilli 1
  30. Garlic 5 Cloves
  31. Salt
  32. Lemon Juice 1tsp
  33. Cumin Powder 1tsp
  34. For Serving
  35. Chopped Onions 1cup
  36. Coriander 1/2 Cup
  37. Nylon Sev 1 cup
  38. Chaat Masala 1tbsp

Instructions

  1. In a pressure cooker, Cook overnight soaked peas with 3 Cups water, salt and turmeric for 6 to 7 whistles.Peas should be cooked properly.
  2. Heat oil in a pan. Add cumin seeds and asafoetida.
  3. Now add ginger, chili and garlic paste.Then add chopped onions and saute for a minute.
  4. Now add dry spices like turmeric, chili powder, coriander powder and garam masala.
  5. Add the boiled peas ragda to this and water if required. Adjust salt according to taste and add lemon juice.
  6. Simmer for 2 to 3 minutes and ragda is ready.Garnish with coriander.
  7. For patties now. Boil Potatoes. Peel and mash them or grate them as there should be no lumps.
  8. Add ginger, chili paste, salt, cornflour and knead a dough.
  9. Oil your hands and make balls and press to give a shape of patties.
  10. Take a non-stick pan and shallow fry these patties till brown on both sides just before serving.
  11. For the sweet chutney pressure cook tamarind, dates,and jaggery for 2 whistles.
  12. Let it cool. Strain to remove the rough pulp.
  13. Add chaat masala,sunth, cumin powder and mix properly.
  14. For green chutney take all ingredients in a mixer jar and add a spoon of water. Grind to the chutney.
  15. Prepare everything together before assembling the ragda patties.
  16. Transfer patties in a serving plate.
  17. Pour ragda to cover the patties.
  18. Now pour the sweet, green chutney.
  19. Sprinkle onions, chaat masala, and sev.
  20. At last garnish with coriander and serve.
