Ingredients to make Sweet Potato Salad

  • 2 Medium Sweet potatoes
  • 1/4 Cup pomegranate Arils
  • 1 green chilly Finely Chopped
  • 1tbsp lemon Juice
  • 10-12 Fresh mint Leaves
  • rock salt to taste
  • 1tsp Chaat masala

How to make Sweet Potato Salad

  1. Wash the sweet potatoes thoroughly under running water to remove all the dirt. Pat dry with a kitchen towel and pierce their skin at 4-5 times with a fork.
  2. Place the sweet potatoes on a microwaveable plate and microwave for about 5-7 minutes, rotating halfway through.
  3. Peel the sweet potato and roughly chop into chunks.
  4. In a mixing bowl take the sweet potato chunks. Add pomegranate arils and chopped green chilly. Season the salad with lemon juice, Chat masala, and salt.
  5. Toss it well taking care not to mash the sweet potatoes.
  6. Garnish with mint leaves and serve hot or cold.

My Tip:

Do not over cook the sweet potato as the salad may turn messy.
