Ingredients Serving: 5

  1. Idli Batter 4 Cups
  2. Food Color Red, green, yellow 1/2tsp
  3. Salt to taste.
  4. Red Chilli Powder 1/2tsp
  5. Mint Leaves 1 tsp
  6. Coriander Leaves 2 tsp
  7. Chana Dal 2tbsp
  8. Mustard Seeds 1/2tsp
  9. Green Chilli 6-8
  10. Honey 2tsp
  11. Oil 2tbsp

Instructions

  1. Take 3 different bowls, put the idli batter in equal portions into them. For green color add green color to one bowl. For orange color add orange color to the bowl. For white color use the basic batter mix.
  2. Now grease the idly mould well and fill each of them with 3/4 full of batter, putting all the colors separately in the idle holders. Steam cook idlis on the medium flame for about 10 minutes. Use a knife to remove the idlis after it cools. Now from each color idli take few pieces and cut them in 4 parts. Keep the rest of the whole idli pieces for decoration
  3. Heat oil in a pan and add the chana dal. When the chana dal starts changing color add the mustard seeds.
  4. Now add the slit green chilies. Keep the chilies aside
  5. Add half of the mint and coriander leaves and the idli pieces.
  6. Now add salt and red chili powder. Add honey and toss.
  7. Place fried idly over the whole idli and garnish with fried green chili and mint and coriander leaves
