ABOUT Coconutty Oats Pinni RECIPE

I made this dish for my granddaughter who has a sweet tooth. Once, my daughter requested me to create such a recipe that could suit her taste and also maintain her health while she carries it to her nursery school. So, I was inspired to use some healthy ingredients that are easily available at home and that children find interesting. This led me to cook these pinnis for my sweetheart granddaughter. There is my emotional connect with this recipe. Hope you like it!

Ingredients Serving: 10

  1. Oats - 2 cups
  2. Finely grated coconut - 3/4 cup
  3. Jaggery - 1 cup
  4. Roasted til - 1/2 cup
  5. Chopped almonds - 1/2 cup
  6. Ghee - 1 cup
  7. Water - 3/4 cup
  8. Cardamom powder - 1 tsp.

Instructions

  1. Add jaggery to a saucepan and add water to it. Cook the ingredients to make a sweet syrup of single-thread consistency. Keep it aside once ready.
  2. Heat ghee on medium flame in a kadhai. Add oats to it and mix well. Roast them until golden brown.
  3. Now, add roasted til, chopped almonds, cardamom powder and grated coconut to the mix. Stir to mix these ingredients.
  4. Take the already-prepared jaggery syrup and keep adding it slowly to the above mixture, while also stirring the mixture constantly so it gets a nice texture. Stir it for about 5 minutes and then take the entire mixture off the flame.
  5. Let the mixture cool down. After a while, take small portions of it and shape them into round or oval pinni balls. The coconutty oats pinni is ready to serve.
