Super healthy nutritious salad
Chop onion, tomato and cucumber in small cubes.
In a bowl add the ingredients of salad : brown rice, boiled chickpeas, diced cucumber, onion, tomato and mix well.
For Salad Dressing :
In another bowl add olive oil, lemon juice, salt, black pepper, chopped coriander and mix well.
Assembly:
Pour the salad dressing over salad, toss and mix well so that salad is coated well with the dressing .
