ABOUT Tuver Seeng Ni Kachori RECIPE

This was one of the first things that I learnt from my mother in law. She is a fabulous cook and loves things that enrich the lives of the family. Tuver seeng of Leeli tuver is one of those. Earlier I had never seen or encountered this grain/vegetable however once I tasted it, I got hooked on for life. Here is how you make it.

Ingredients Serving: 4

  1. 2 cup - Wheat flour
  2. 1 & a 1/2 cup - Shelled tuver sing
  3. 3 to 4 - green chillies
  4. 4 tbsp - Oil for dough
  5. 2 tbsp - Oil for tempering the filling
  6. 2 tbsp - Sugar
  7. 1 tbsp - Jeera/cumin seeds
  8. 2 tsp - Mustard seeds
  9. Water as needed
  10. Oil to fry
  11. Salt to taste

Instructions

  1. Mix the flour, salt and oil to form a dough. Knead to a Poori like consistency. Keep it in an air tight container.
  2. In a mixer jar, add the green chillies and make it into a paste. Add the tuver sing, little at a time and grind it into a coarse paste.
  3. Heat 2 tbsp oil in a pan, add the cumin and mustard seeds. Add the tuver sing and green chilly mix. Let it cook for 5 mins on a low-medium heat.
  4. Add sugar and let it mix well. Once the mix starts to turn to a darker shade of green, turn off the gas and let it cool to a room temperature.
  5. Now make about 25-30 balls out of the dough. Roll them out a little and add about 1 to 1 & a 1/2 tsp of the mixture. Close the ends and secure properly.
  6. Heat oil in another pan for deep frying. Fry about 5-6 at a time and let it get a nice and golden from all sides.
