No-Bake MISHTI-DOI Cheesecake

Ingredients to make No-Bake MISHTI-DOI Cheesecake

  • 150g packet digestive biscuits- 1
  • Amul butter 100g - 1
  • 400g tub of mishti doi- 1
  • cream cheese- 100 gms
  • Gelatine - 2 tablespoons
  • cream (optional) - 100 gms

How to make No-Bake MISHTI-DOI Cheesecake

  1. Mix the powdered biscuits and the butter to form a paste. Press into the bottom and sides of a tart pan. Freeze until the biscuit base is hardened.
  2. Meanwhile, take the misthi doi, drain whey, add the cream cheese and cream (optional)
  3. Soak 2 tablespoons gelatin in 6 tablespoons of room temperature water, let it bloom for 5-10 mins.Then warm it in the microwave for 15 seconds (you can also do it over a Bain Marie) stir until the gelatin has melted and is smooth.
  4. Add the gelatin to the curds mixture. Mix well and pour over the biscuit base. Place back in the freezer until the cheesecake sets (do not let it crystallize)
  5. Garnish with crushed pistachios

My Tip:

I usually skip the cream and reduce the cream cheese to give it a low-on-guilt touch. Unsalted butter can also be used but I prefer regular Amul salted butter.
