Ingredients Serving: 5

  1. River/ sea fish (with single center bone) 5
  2. Black pepper powder 2 tsp
  3. Butter to baste 3 1/2 tbsp
  4. Fennel seeds 2 tsp
  5. Garlic paste 5 tsp
  6. Ginger paste 5 tsp
  7. Ghee 3 1/2 tbsp
  8. Gram flour 2 2/3 tbsp
  9. Lemon juice 5 tsp
  10. Red chilli powder 4 tsp
  11. Salt to taste
  12. Turmeric powder 2 tsp
  13. Vinegar 3 tbsp
  14. Yogurt (drained) 1 cup

Instructions

  1. Marinate fish in vinegar and salt
  2. In a bowl, combine the remaining ingredients and mix to a fine paste.
  3. Rub the fish in and out with masala and leave it for 2-3 hours
  4. Preheat the oven to 175°C
  5. Skewer the fish from tail to mouth
  6. Roast in oven for 12-15 mins. Keep a tray underneath to collect the drippings
  7. Baste with butter. Remove and hang the skewers and let the excess moisture drip off
