Ingredients to make Pumpkin Soup

  • pumpkin 450 gms
  • vegetable stock 600 ml
  • milk 300 ml
  • butter 1 tbsp
  • salt to taste
  • pepper to taste
  • For the croutons: 3 slices of white bread
  • oil 2 tbsp
  • water

How to make Pumpkin Soup

  1. Wash and peel pumpkin, remove the seeds and the white portion of pumpkin. Cut it into small pieces.
  2. In a pan, add enough water and bring it to boil. Press the pumpkin through a sieve and add the juice into the water.
  3. Add butter, milk and stock and bring it to boil. And season it as per your preference.
  4. Cut the bread into small square sizes. In a pan, heat oil to smoking and fry the bread pieces until they turn brown in colour. Make sure you don't burn the bread.
  5. Add the bread pieces (croutons) to the soup.
