ABOUT Healthy Ragi Cake RECIPE

Ragi cake is healthy and gluten free cake. It is easy to make. It looks like chocolate cake therefore kids will love to eat it.

Ingredients Serving: 8

  1. 1 cup + 2 tbsp Ragi/Finger Millet Flour
  2. 1/4 Cup - Sugar
  3. 1/4 Cup - Honey
  4. 1 - Cup Grated Carrot
  5. 3/4 tsp Baking powder
  6. 1/2 tsp - Baking Soda
  7. 1/2 Cup - Chopped Walnuts
  8. 1/4 tsp - Salt
  9. 1/2 Cup - Curd
  10. 1/4 Cup - Saffola Oil
  11. 1 tbsp - Flax Seed Powder
  12. 2 tbsp - Almond Meal
  13. 1 tbsp - Melted Chocolate
  14. For icing:
  15. 1/2 Cup - Homemade Low-fat Cottage Cheese
  16. 1/2 Cup - Homemade Low-fat Hung Curd
  17. 2 tbsp - Powdered Sugar
  18. For ragi sticks:
  19. 1/2 cup - powdered sugar
  20. 1/2 cup - butter
  21. 1 cup - Ragi flour
  22. 1tbsp - flax seed powder
  23. 1 tbsp - white sesame seeds
  24. 1/2 tsp - Baking powder
  25. 1/4 tsp - Baking Soda

Instructions

  1. Preheat oven to 180°C. Grease and dust 5” round cake tin.
  2. In a bowl mix together flour, baking powder, baking soda, flex seed powder, almond meal and salt.
  3. In another bowl cream together honey, sugar and oil. Add in the curd and whisk.
  4. Now add the flour mixture, grated carrots and walnuts and mix until the batter is lump free.
  5. Pour the batter in greased tin. Bake for 20-25 minutes.
  6. Insert a toothpick in the cake, if it comes out clean the cake is properly baked. (If not done reduce the temperature to 160°C and bake for 5-10 minutes)
  7. After it is cooled, demould it and slice the cake horizontally in two parts.
  8. For icing, blend hung curd and cottage cheese in a mixer jar. Add sugar and beat it with a hand blender.
  9. Sandwich the icing between the layers of the cake.
  10. Also cover the cake completely with icing and smoothen it with a spatula
  11. Make a spiral web with melted chocolate or decorate as desired.
  12. For ragi sticks mix all the ingredients and make a dough. Roll the dough and cut into strips. Bake in preheated oven at 180?C for 15 minutes.
  13. Cover the cake side with the prepared ragi sticks.
