With potato and brinjal

Ingredients Serving: 6

  1. To Grind:
  2. 1/2 fresh coconut grated
  3. 2 medium onions
  4. 2 medium tomatoes
  5. 3 tablespoon sambar powder
  6. To temper:
  7. Oil- 1 tsp
  8. Little mustard
  9. Little chopped onion
  10. Curry leaves
  11. Green gram as required
  12. 2 potatoes chopped
  13. 2 brinjal chopped
  14. water
  15. salt as required
  16. tamarind pulp

Instructions

  1. Grind all the ingredients under section "to grind" into a smooth paste.
  2. In a pan, add little oil, once heated, add mustard. When it splutters, add onion, curry leaves and fry.
  3. Once onion turn soft, add green gram and on a low flame fry it for 2 minutes or until the raw smell goes off. Add chopped potatoes, brinjal and fry.
  4. Add little water and bring it to boil. Cook till green gram has cooked to half way.
  5. Now add in the grinded paste, sufficient water (to get the sambar consistency). Cook till the spice smell is gone.
  6. Add in salt, tamarind pulp. Cook for a minute or two. Check for seasoning. Sambar is ready.
