An idli which needs very less time for preparation and for cooking too.

Ingredients Serving: 4

  1. Rava (suji)- 5 cups
  2. Red chillies - 2
  3. Cumin seeds - 1/2 tspn
  4. Mustard seeds - 1 tspn
  5. Curry leaves - 10
  6. Curd - 2 cups
  7. Green chillies - 1 or 2
  8. Grated ginger - 1 tspn
  9. Oil - 3 tspn
  10. Ghee - 1 to 2 tspn
  11. Eno or baking soda - 1 pinch
  12. Salt as per taste

Instructions

  1. Heat oil and ghee in kadai. Add the red chillies, cumin seeds and mustard seeds.
  2. Let them splutter. After that add curry leaves.
  3. Once its done, add the suji and mix well.
  4. Keep stirring the suji so that it does not get burn. You have to cook it till the fine aroma of suji comes.
  5. A light change in color is good. Make sure not to cook much as in case of suji halwa.
  6. Switch off the flame and allow it to cool.
  7. Now take the curd in a bowl, add the grated ginger and finely chopped green chillies.
  8. Meanwhile, the sooji has cooled, add it slowly in this curd mixture.
  9. In order to make a fine batter, add some water.
  10. Add salt and a pinch of baking soda and let it sit for approx an hour.
  11. Now grease the idli stands with oil and pour the batter one by one.
  12. Add little water in pressure cooker and switch on the flame. Once the vapour starts coming, put the idli stand in it.
  13. Cover it and cook for 10 min.
  14. Rava idli is ready.

Hello, I like this recipe and I want to make it for the first time. However, I need some clarification. What is 5 cups of suji and all of its ingredients? Secondly....what are the ingredients for the curd and how do I make it? I have heard about milk curd but it is not vegan. I am not clear on what you are using for your curds. Please give me all of the ingredients and steps for this recipe. Thanks
