ABOUT No Bake Labneh-Orange Cheesecake served with Honey-Orange Sauce RECIPE

This is not the conventional cheese-cake but qualifies to be one since it uses Labneh, the yogurt cheese. No gelatine, no agar agar, no sugar, no cream cheese, no cooking or baking and yet the No Bake Labneh Cheese Cake sets beautifully while tastes refreshing. The base of this cheese cake uses jaggery powder and is mildly spiced with sweet spices. There is no cooking time involved but the prepping up takes place in the refrigerator while the cheese-cake chills in the refrigerator for a good 8 hours. Since the cheese-cream layer does not use sugar and is sweetened with orange juice and served with a honey-orange sauce.

Ingredients Serving: 8

  1. For the base:
  2. 10-12 digestive biscuits
  3. 100 grams melted butter (I have used unsalted butter)
  4. 1/2 cup powdered Jaggery
  5. 1/2 teaspoon sooth/ dried ginger powder
  6. 1/2 teaspoon cinnamon powder
  7. 1/2 teaspoon freshly grated nutmeg
  8. For the cheese layer:
  9. 1 cup labneh/ yogurt cheese/ hung curd
  10. 1 cup cream (I have used Amul's low fat cream)
  11. 1 tablespoon orange zest
  12. Juice of one orange
  13. 1-2 oranges cut into segments for decoration
  14. For the Honey- Orange Sauce
  15. 3/4 cup honey
  16. 1 cup orange juice
  17. 1/4 cup water
  18. 1 tablespoon orange zest

Instructions

  1. For the cheesecake base:
  2. Prepare a 7 inch springform tin by greasing its base with butter and lining its side with butter paper.
  3. In a food processor or a mixture grinder roughly grind the digestive biscuits, add the jaggery or sugar and pulse it once again, add the spice powders and pulse once again.
  4. Lastly add the butter and give the mix one good pulse.
  5. Transfer the mix in the prepared tin. Using the back of a flat bowl or spatula press the mixture well to form one even layer
  6. Put it in the refrigerator for 1 hour to set firmly.
  7. For the cheese layer:
  8. In a chilled bowl, using a balloon whisk beat the cream until it aerates a bit. Similarly, whisk the labneh to a smooth texture, add the cream and add the orange juice and zest.
  9. Continue to whisk until it forms a smooth and homogeneous mixture.
  10. Transfer this cheese mix over the chilled base. Tap it well to have a bubble free and smooth top.
  11. Place the Cheesecake in the refrigerator and allow it to chill and set for atleast 8 hours.
  12. Just before serving garnish the No Bake Labneh and Orange Cheesecake with orange segments.
  13. Serve with the honey orange sauce.
  14. To make honey- orange sauce:
  15. Mix all the ingredients, except the orange extract, in a thick bottomed saucepan and simmer the mix for 15-20 minutes on a slow to medium flame. The mix will reduce to a thick sauce.
  16. Turn off the flame.
  17. Chill before using it as an accompaniment.
