Brown rice is very healthy option. So if it is combined with nuts and veggies it becomes a healthy complete meal.

Ingredients Serving: 3

  1. Boil brown rice in salty water 1 cup
  2. Purple cabbage chopped 1/4 cup
  3. Bell peppers (red, green, yellow) chopped 1/3 cup
  4. Broccoli 2 small pieces
  5. Roasted mix nuts (almonds, walnuts, pinenuts)
  6. For dressing :
  7. Olive oil 2 tablespoons
  8. Salt to taste
  9. Black pepper to taste
  10. Oregano 1 tablespoon
  11. White wine vinegar or lemon juice 1 tablespoon

Instructions

  1. Mix all ingredients of dressing.
  2. Then add chopped vegetables and nuts. Mix well.
  3. Now add boiled brown rice. Mix properly.
  4. Your salad is ready. Serve chilled.
