ABOUT Eggless Semolina Cake RECIPE

This is a super easy, quick and a very healthy cake recipe as made up of Semolina (not refined flour), eggless and is made in airfryer. My personal favorite as it tastes awesome!!! Semolina Cake is a Eurasian cake that is usually made on festive occasions in Malaysia and Singapore. An Eggless Semolina Cake is a rich, battery cake with a coarse texture from the semolina or suji flour. The eggless semolina cake bakes into a crunchy layer on the top and bottom but stays moist and delicate within.Brandy and Rose Essence (a wonderful combination) adds to the unique flavor of the cake. Semolina Cakes can be made both eggless as well as with egg, but it does not affect its softness or its fluff. This cake is so rich that a small slice will suffice, much like a rich fruit cake. It also serves of health with taste or diabetes patients. SemolinaCake is often served as a celebratory dish on various occasions.

Ingredients Serving: 5

  1. Semolina (Fine Suji): 2.5 cups (Do not use coarse semolina)
  2. Yoghurt: 1 Cup
  3. Milk: 1 Cup
  4. Sugar : 1 Cup
  5. Tutty Fruity: 1/2 Cup (Raisins or walnuts can be used as we
  6. Baking Powder : 1 1/2 tsp
  7. Baking Soda : 1/2 tsp
  8. Vegetable oil: 1/2 Cup
  9. Salt A pinch

Instructions

  1. Mix Semolina, Yogurt, Milk, Sugar and Vegetable oil. Keep mixture aside for 15 minutes to allow fermentation of suji. Ensure that the consistency of the batter is like that of idli batter so milk can be added if required.
  2. Once suji is fermented, add add baking powder & baking soda.
  3. Then add tutti fruity and cut and fold the batter.
  4. Grease a baking pan with oil and pour the cake batter into the pan. Tap it nicely and spread it evenly.
  5. Preheat the airfryer at 180 degrees and put the cake for baking for 15 min at 160 degrees. Check the cake with a knife or tooth pick till it comes out clean. You will get a nice golden brown cake once ready. Allow standby time of 10 min.
  6. Take the cake out of oven. Let it cool completely.
  7. Once cool, cut into pieces & serve. There should be smile on your face while serving.
