ABOUT Moroccan Style Pecan Couscous Salad with Tahini Lemon dressing!! RECIPE

Rainbow served on a Platter - as I call this beautiful Moroccan style couscous salad. It's super easy to make and brightens up any mood at any given day. Make it for any party or gathering and it will be talk of the town in no time. It's not only amazingly gorgeous but also loaded with nutrition. Let's get started!!

Ingredients Serving: 4

  1. 1 cup of Moroccon Style Couscous
  2. 1 small onion soaked in vinegar for about 2 hours, finely chopped
  3. 1/4 cup pecans
  4. 1/2 cup cherry tomatoes
  5. 1/2 cup finely chopped parsley
  6. 1/2 cup finely chopped cucumber (I used Japanese cucumber as they are sweet and raw)
  7. Juice of 1 yellow lemon or more as per your preference
  8. 2 tbsp tahini (Tahini is paste made from toasted sesame seeds & extra virgin olive oil.
  9. 2-3 tbsp extra virgin olive oil.
  10. Toasted sesame seeds for topping/ sprinkle over salad just before serving.

Instructions

  1. Cook couscous in water as per instructions on packet (Make sure its not over cooked.)
  2. Let it cool down and prepare all other ingredients to be ready
  3. Take a big bowl, add cooked couscous, chopped onion, chopped cucumber, cherry tomatoes (cut into halves), parsley and half of pecans chopped into pieces.
  4. In an another bowl, make dressing with lemon juice, tahini, extra virgin olive oil and salt to taste.
  5. Add dressing and give it a toss.
  6. Garnish with remaining pecans & toasted sesame seeds just before serving and enjoy!!
