Ingredients to make Potato purse

  • Ingredients For crust---1 cup all purpose flour/maida
  • 1 tbsp finely chopped fresh coriander
  • tsp carom seeds/ajwain
  • 2 tbsp oil
  • salt to taste
  • water as required for kneading
  • oil for frying
  • Ingredients for stuffing---2 large boiled potatoes
  • 1 tsp finely chopped green chillies
  • 2 tbsp finely chopped fresh coriander
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp chaat masala
  • 1 tsp chilly flakes (optional)
  • salt to taste

How to make Potato purse

  1. Step 1. Combine all the ingredients for crust to form dough neither too hard nor too soft. Rest it for 20 minutes.
  2. Step 2. Mash potatoes, add all the spices, dry as well as fresh ones, and mix well.
  3. Step 3. Make 4 or 5 equal sized balls of dough.
  4. Step 4. Roll out each one approximately to the diameter of 3 inches.
  5. Step 5. Make a semi-circular cut a little inside the edge to make the purse handle.
  6. Step 6. Place a spoonful of stuffing on the other half.
  7. Step 7. Carefully lift the semi-circular flap from above and fold it down on the stuffing.
  8. Step 8. Press the edges gently with a fork. This will seal the edges more securely and also form a pattern.
  9. Step 9. Gently lift the purse from the stuffing side and slide into hot oil.
  10. Step 10. In about 1 minute, lower the flame to medium flame and fry till golden brown. Your potato purse is ready to be served! Enjoy with dips or chutneys of choice.
