Ingredients to make KHANDAVI

  • 1 cup besan
  • 1 cup curd
  • 2 cups water
  • Pinch of haldi
  • salt to taste
  • 1 tbsp oil for the mixture
  • Some oil for greasing the platform
  • 2 tbsp oil for tadka
  • 1 tsp rai
  • 1 tsp white sesame seeds
  • 2 finely chopped green chillies
  • 1 tbsp finely chopped coriander leaves
  • 2 tbsp grated fresh coconut

How to make KHANDAVI

  1. In a mixing bowl put together besan, curd and water
  2. Blend it well with a wire whisk
  3. There should be no lumps remain in the batter
  4. Now add haldi and salt, mix well
  5. Now put this mixtute in a pan or kadai
  6. Switch on the gas
  7. Cook on low heat, stirring continuously
  8. Cook until it becomes thick and leaves the sides
  9. Then add 1 tbsp oil to the mixture and mix nicely
  10. The ready batter
  11. Grease a kitchen platform
  12. Spread the ready mixture on the greased platform
  13. Spread it with a spatula or flat wooden spoon
  14. When becomes little cool then cut it in strips and roll them
  15. The rolled out khandvi
  16. Now heat oil in a pan, put rai, sesame seeds, let them splutter, then add green chillies
  17. Arrange the khandvi pieces in a serving plate and pour tadka on top, garnish with chopped coriander and grated fresh coconut
  18. Enjoy khandvi like that only, or you can even have these with green chutney
