ABOUT Cooker payasam RECIPE

This is a speciality of Kerala made with short grained Matta rice. (unpolished brown rice)

Ingredients Serving: 8

  1. 1 litre - milk
  2. 1/2 cup - rice cleaned and washed
  3. 1 cup - sugar
  4. 3 whole cardomom

Instructions

  1. Take a 5 liter pressure cooker. Pour the milk into it and bring to a boil.
  2. Add the rice, sugar and the cardamom.
  3. Cook on a high flame. Give one pressure whistle. Lower the flame and cook for 20 minutes.
  4. Take it off the fire and serve hot. Open the cooker only once the full pressure is released. This takes about 10 - 15 minutes.
