ABOUT Mango and coconut yogurt fool RECIPE

A fool is an English dessert which is made with stewed fruit and cream. This tropical version incorporates mango, coconut and yogurt. The mango feels fresh, the coconut crunchy and the yogurt lends its characteristic tang. A simple, light option for a chilled summer dessert which is a pretty colorful dish to serve.

Ingredients Serving: 2

  1. 1 - mango (flesh)
  2. 120 ml or 1/2 cup - fresh cream (chilled)
  3. 120 ml or 1/2 cup - yogurt
  4. 2 tbsp - coconut milk (optional)
  5. 2 tbsp - desiccated coconut
  6. 3 tbsp - granulated sugar
  7. 1 teaspoon - lime juice

Instructions

  1. Chop the mango flesh into small chunks. Heat in a saucepan with the lime juice and 1 tbsp sugar for 5-6 minutes until the mango has broken down or is soft. Let it come to room temperature.
  2. Whisk the chilled cream with the remaining 2 tbsp of sugar until soft peaks form.
  3. Add the yogurt, coconut milk and desiccated coconut then whisk it for a few seconds until smooth.
  4. Spoon a couple of tablespoons of the mixture into your serving glasses, then add a tablespoon of the stewed mango and add more cream- yogurt mixture. Continue the process till the glasses are full.
  5. Chill in the fridge for 30 minutes. Serve it cold.
  6. To garnish (optional) : top with chopped mango and some toasted coconut.
