ABOUT Beetroot yogurt dip or beetroot tzatziki RECIPE

This dip is a Greek/ Mediterranean style accompaniment. The beetroot and yogurt is flavored with garlic, lime juice and some spices. It is great for dipping lavash, crackers or bread . You can also use it as filling in your sandwiches or wraps. It is really simple and really delicious!

Ingredients Serving: 10

  1. 1 - medium beetroot
  2. 120 ml or 1/2 cup - yogurt
  3. 3 - cloves garlic (finely chopped or crushed)
  4. 2 - teaspoons lime juice
  5. 1/2 teaspoon - cumin powder
  6. 1/2 teaspoon - pepper powder
  7. Salt to taste

Instructions

  1. Immerse the beetroots in a saucepan of water, bring to a boil and then simmer for 20 minutes. Cool, peel and grate the beetroot.
  2. Mix the grated beetroot with the yogurt. Add the garlic, lime juice, cumin powder, pepper powder along with the lime juice and salt. Then mix all the ingredients well.
  3. Serve cold or at room temperature.
