ABOUT Adai (Mixed dals dosa) RECIPE

A very tasty and crispy dosa made in Kerala style

Ingredients Serving: 4

  1. Raw rice - 1 1/2 glass
  2. Chana dal - 1/4 glass
  3. Tur dal - 1/4 glass
  4. Yellow moong dal - 1/4 glass
  5. Urad dal - 1/4 glass
  6. You can add a handful of pink masoor dal also...
  7. Methi seeds- 1 tspn
  8. Dry red chillies- 3 to 4 nos ( adjust according to taste )
  9. Salt to taste
  10. Asafoetida - 1/4 tspn
  11. Ginger- half inch piece finely chopped
  12. Small baby onions - 4 to 5 nos
  13. Onion- 1 big
  14. Curry leaves - about 10 sprigs
  15. Green chilli - 2
  16. Oil for making the dosa (I mixed refined and coconut oil and used)

Instructions

  1. Wash the rice and dals, soak for about 3 hours... Put methi seeds and dry red chilly with the rice and dals....
  2. Take a mixer jar and grind the rice, dals with the dry red chilli... pour into a big vessel.
  3. In the same jar put the baby onions, curry leaves, green chilly and big onion and coarse grind it...
  4. Put this ground paste in the batter, add salt, chopped ginger and asafoetida pwdr... Mix well.
  5. There is no need for fermentation here....You can make the dosa instantly
  6. Heat the dosa tawa and when hot pour the batter... spread it in circular motion and make dosa....
  7. Drizzle oil over the dosa... Flip when done, drizzle oil again....cook on the other side till nice and crisp.
  8. Serve hot with molgapodi or chutney of your choice :blush:
  9. Ready to serve

my mother s fav recipe. the same recipe i used to follow. so tasty. she takes it with small onion & red chillies chutney with coconut oil.
